Red Chicken Curry with Basmati Rice

A classic Sri Lankan chicken curry, traditionally red in colour because of all the chillies that go into it! Bursting with aromatic spices, including freshly ground cumin, coriander and fennel, combined with fragrant lemongrass and creamy coconut, this warm and comforting curry is a great place to start on your Sri Lankan culinary adventure. Don’t worry though - we've kept the chilli separate so you can decide how red you want it!

Ingredients included…
Rice, ginger, garlic, malt vinegar, coconut powder (coconut milk powder (78%), maltodextrin, milk protein, stabiliser), cinnamon stick, dried curry leaves, fenugreek seeds, cardamom pods, lemongrass (freeze dried) curry leaves, chilli powder, freshly ground spice blend (containing mustard seeds).

Shopping List
300 - 400 g chicken
1 onion
2 fresh tomatoes or 200g chopped tomatoes

From the larder:
1-2 tbsp cooking oil
Salt

*NOTE* This kit contains fresh ginger so will typically last between 5-7 days. To extend the shelf life of the ginger, remove the ginger from the kit & from its plastic bag and keep refrigerated for up to a month.
